Pest prevention is at the heart of the health compliance of any catering establishment. The owner had received a formal notice during an inspection by the Public Health Department, citing potential pest risks. He wanted to correct the situation quickly and put in place a sustainable preventive program. Urgent audit and vulnerability diagnosis<\/h2>\n

The audit was carried out outside the restaurant’s opening hours so as not to disrupt operations. Our technician inspected each preparation area, the cold room, the dry storeroom, the kitchen, the dining room, the staff changing rooms, the waste room and the outside perimeter of the building. Several critical deficiencies were identified: a space under the delivery door allowing rodents to pass through, unsealed plumbing passages under the main sink, damaged or missing exterior ventilation grilles, a defective garbage room bottom gasket, and residue accumulated behind large kitchen equipment. Remedial work and exclusion measures<\/h2>\n

Work began the day after the audit. The delivery door has been equipped with a dense rubber industrial door bottom seal and a self-closing system. The plumbing passages under the sink were sealed with compacted steel wool and two-component polyurethane sealant that is resistant to heavy cleaning. The external ventilation grilles have been replaced by tightly meshed stainless steel models, resistant to corrosion and intrusion attempts. The waste room received a new threshold seal and additional lighting to discourage nocturnal pests. Behind the kitchen equipment, professional cleaning has been carried out, eliminating sources of attraction. A comprehensive IPM program has been put in place to meet public health requirements. Certified rodent monitoring stations have been positioned in the waste room, under the main sink, in the dry storage room and at the entrance to the kitchen. Crawling insect traps have been installed in risk areas. A waste management plan has been drawn up with the staff: hermetic sealing of the bags, emptying before closing each evening, weekly cleaning of the waste room. The owner was able to present a complete documented file, including intervention reports, technical sheets of the materials used and monitoring records. The regained health compliance has also allowed the restaurateur to serenely renew his operating permit and reassure his loyal customers.
