The manager of a family cuisine restaurant located in the heart of Saint-Denis-sur-Richelieu, a historic village in the Montérégie region on the east bank of the Richelieu River, alerted our team after a strong smell of skunk invaded the dining room one night of service. Several tables had to be freed up and the evening ended prematurely, resulting in a direct financial loss. The initial investigation quickly identified a skunk installed in the technical space located under the stairs of the outdoor terrace, only a few meters from the kitchen windows and the ventilation system. The proximity to food preparation areas added an urgent health dimension to this already complex situation.
Sanitary inspection and location of the burrow
The inspection was conducted after the restaurant closed, which allowed our technicians to work without disrupting the service. The burrow was located under a wooden staircase whose risers had sufficient gaps to allow access. A thermal lamp inspection confirmed the presence of only one animal, an adult, and the absence of young in the burrow. The exterior perimeter of the restaurant was also examined: organic waste accumulated near the garbage bins awaiting collection was an obvious source of attraction for the skunk, as was the leftover food deposited in the bins without lids.
Our exterminator in Saint-Denis-sur-Richelieu also inspected the void under the wooden service deck to verify that no other access would allow an animal to resettle after the first burrow was closed. The terrace adjacent to the outdoor room had a slight lifting of the floor which will be monitored during future inspections.
Capture and management in the context of recovery
The capture of skunks in the context of restaurants is subject to specific constraints related to food hygiene standards. All our equipment and handling procedures have been adapted to avoid cross-contamination with food preparation or storage areas. The traps were installed under the stairs after closing and removed before the morning opening, so that they would never be present during service hours. The bait used, based on non-meat food, was not likely to attract unwanted animals inside the restaurant.
The skunk was captured on the second night of monitoring. Its relocation was carried out early the following morning, before the kitchen staff began its implementation. The animal left without incident, and no signs of spraying were detected during handling.
Deodorization and treatment of contaminated areas
Although the animal had not sprayed directly inside, the space under the stairs had an accumulation of odours due to the skunk’s prolonged presence. A complete enzymatic treatment was applied under the stairs and in the immediate vicinity of the terrace. Decontamination and disinfection of the exterior surfaces was carried out to eliminate any olfactory trace likely to attract another animal. The exterior ventilation system was checked to ensure that no residual odors could be sucked into the interior of the restaurant.
Corrective measures and prevention in the restaurant industry
Specific recommendations for the catering sector were given to the manager: hermetic sealing of the organic waste bins, installation of latch lids on the outdoor skips, daily cleaning of the perimeter of the terrace and automatic lighting at the back of the building. The staircase to the terrace was sealed at its base by a galvanized wire mesh anchored in the ground.
