In Saint-Hyacinthe, on the South Shore, a neighbourhood restaurant located in a commercial area had to temporarily close its kitchens after a public health inspection found traces of German cockroaches in food preparation areas. In addition to the insecticide treatment, the surfaces contaminated by their excrement, moults and eggs required thorough and certified decontamination before any resumption of activity. The issue was as much health as commercial: the reputation of the establishment and its operating license depended directly on the speed and quality of the intervention. German cockroaches can carry pathogens like Salmonella and E. coli on food surfaces and produce respiratory allergens that can affect personnel. Health assessment of the catering areas
German cockroaches produce recognized allergens that contaminate surfaces far beyond their mere visible presence. Our technicians inspected all the kitchens: the underside of the cooking equipment, the inside of the refrigerator and freezer motors, the silicone seals of the worktops, the extraction ducts and the overhead storage areas. Fecal deposits in the form of small black dots, empty oothecae and moults have been recorded on more than thirty linear metres of surface. The most affected areas were around the fryer and the industrial dishwasher, two sources of heat and humidity that are very attractive to this species. Active eggs were found in the silicone joints of the main work surface, indicating that the population was in the middle of the reproductive phase. The spread from the kitchen to the dining room could compromise the entire building if the intervention had been delayed any longer. This extensive documentation allowed the owner to submit a complete file to the public health inspector to support the reopening application. Certified decontamination of food surfaces
The food context requires the use of disinfectant products approved for indirect food contact. Our team partially dismantled the kitchen equipment to access areas that are inaccessible in normal use: refrigerator recovery trays, stainless steel table bases bolted to the floor, inside the under-counter cabinets. A deep mechanical cleaning preceded the application of a disinfectant based on activated hydrogen peroxide, without toxic residue after rinsing. The heavily contaminated silicone gaskets were cut out and replaced after disinfection of the grooves. The extraction ducts were cleaned with a brush and disinfected by internal nebulisation. All the food surfaces were then rinsed with hot drinking water before final validation. The owner has received a decontamination certificate with a traceability report of the products used, a document required for reopening from the health authorities. Prevention of recurrence in the restaurant setting
Decontamination without follow-up is insufficient in a restaurant. A pest prevention program adapted to the food sector has been implemented for this Saint-Hyacinthe establishment. This plan includes monthly inspections of risk areas, preventive application of insecticidal gel at strategic points outside of food contact areas, and the installation of pheromone traps for early detection. The restaurant’s teams received a short training on good practices: rigorous management of organic waste, daily cleaning of the areas behind the equipment, and immediate reporting of any suspicious sightings. Cracks between the ceramic tiles on the floor were repointed with a washable epoxy putty to eliminate potential refuges. New deliveries are now inspected upon receipt to ensure that they are not a vector for reinfestation.
