Pest prevention is at the heart of the health compliance of any catering establishment. The external ventilation grilles have been replaced by tightly meshed stainless steel models, resistant to corrosion and intrusion attempts. The waste room received a new threshold seal and additional lighting to discourage nocturnal pests. Behind the kitchen equipment, professional cleaning has been carried out, eliminating sources of attraction. Health Surveillance and Compliance Program
A comprehensive IPM program has been put in place to meet public health requirements. Certified rodent monitoring stations have been positioned in the waste room, under the main sink, in the dry storage room and at the entrance to the kitchen. Crawling insect traps have been installed in risk areas. A waste management plan has been drawn up with the staff: hermetic sealing of the bags, emptying before closing each evening, weekly cleaning of the waste room. Results and regained compliance
During the follow-up inspection by the Direction de la santé publique, the Saint-Hubert restaurant received a favourable opinion without parasitic observations. The owner was able to present a complete documented file, including intervention reports, technical sheets of the materials used and monitoring records. The regained health compliance has also allowed the restaurateur to serenely renew his operating permit and reassure his loyal customers.
